Bring 4 cups of water to a boil in a medium saucepan.
Once boiling, remove from heat and add the black tea bags and sliced ginger. Allow it to steep for about 10 minutes.
While the tea is steeping, prepare the strawberries by hulling and slicing them.
Once the tea has steeped, remove the tea bags and ginger. Stir in the honey until dissolved.
Add the prepared strawberries to the tea and allow the mixture to cool to room temperature.
Once cooled, strain the tea to remove the strawberry pieces and any ginger remnants.
Stir in the lime juice.
Fill glasses with ice cubes and pour the strawberry iced tea over the ice.
Garnish with fresh mint leaves and serve.
